Abstract


Managing the post-weaning period in children-farm in North Kivu is a problem that requires the use of local products of agriculture. A composite flour made from corn, sweet potato, pumpkin and soy has been proposed to substitute breast milk. Three treatments were then developed with each clean overalls him. The physico-chemical analyzes and the organoleptic characteristics tests were then performed on the three treatments at the end of which the following results were obtained:
- Treatment III, containing 30% corn, 40% of sweet potato, squash 10% and 20% soy, was found to be the combination that offers many advantages over other light of its wealth protein, minerals and vitamins;
- The composite flour obtained has remarkable physicochemical properties. Low humidity for proper preservation, a protein capable of covering in small quantities the protein needs of children under one year, an acceptable percentage of fat needed to provide essential lipids in the body without so ask digestion or diarrhea problems. The only drawback it has is that it contains few minerals and vitamins.
- When compared to breast milk and formulations already developed in the North, the composite flour obtained is illustrated with a high protein content (16%), low humidity and a share of acceptable fat. It also has weaknesses as regards mineral salts and vitamins.
- The organoleptic characteristics of this flour have been very interesting with an average rating of "very good" from every point of view whether the aroma, the taste and color.

Gérer la période post-sevrage chez les enfants en milieu paysan au Nord-Kivu constitue un problème qui nécessite le recours aux produits locaux issus de l'agriculture. Une farine composite à base de maïs, patate douce, courge et du soja a été proposée pour substituer le lait maternel. Trois traitements ont alors été élaborés avec chacun une combinaison propre à lui. Les analyses physico-chimiques ainsi que des tests des caractéristiques organoleptiques ont ensuite été effectuées sur les trois traitements à l'issu des quels les résultats ci-après ont été obtenus :
- Le traitement III, contenant 30% de maïs, 40% de patate douce, 10% de courge et 20% de soja, s'est révélé comme étant la combinaison qui offre bien d'avantages par rapport aux autres tenant compte de sa richesse en protéines, en sels minéraux et vitamines ;
- La farine composite obtenue présente des propriétés physico-chimiques remarquables. Une humidité faible permettant une bonne conservation, une teneur en protéines capable de couvrir à des faibles quantités les besoins en protéines des enfants de moins d'un an, un pourcentage de matières grasses acceptable nécessaire pour apporter les lipides indispensables à l'organisme sans pour autant poser des problèmes de digestion ou de diarrhée. Le seul défaut qu'elle présente est qu'elle contient peu des sels minéraux et de vitamines.
- En la comparant au lait maternel et aux formulations déjà élaborées dans les pays du Nord, la farine composite obtenue s'est illustrée avec une teneur en protéines élevée (16%), une humidité faible et une part de matières grasses acceptable. Elle a aussi accusé des faiblesses en ce qui concerne les sels minéraux et les vitamines.
- Les caractéristiques organoleptiques de cette farine se sont révélées très intéressantes avec une moyenne de cote « Très Bien » à tout point de vue qu'il s'agisse de l'arôme, du gout et de la couleur.
